Our story
From mochigome to mochi, by hand
Amai Mochi is a small Bern manufactory of Japanese confectionery. Everything starts with mochigome, a short-grain glutinous rice, steamed and then pounded until it reaches that silky, elastic texture that gives mochi all its charm.
Our fillings are made in the atelier: slow-simmered azuki bean anko, roasted black sesame creams, fresh fruit picked at the market. No preservatives, no artificial flavours, small batches shaped every morning.
Between Kyoto tradition and Swiss seasonal fruit, we look for that balance: recipes true to the wagashi spirit, made with the best our regions offer.
The right gesture
A mochi is shaped in seconds, but the gesture takes years: stretching the still-warm dough, enclosing the filling without bruising it, twisting the pleat closed. Every piece passes through the same hands.
Rooted in Bern
Our atelier works with local producers for fruit and dairy. Orders are picked up in Bern or travel in chilled parcels across Switzerland.
